Coconut Rum and Whiskey Chocolate Truffles

 

Forget ordering fudge, forget the cards and last-minute grocery store gifts…because you can’t really go wrong when chocolate and liquor are involved! I’m not really big on going overboard for Valentine’s Day, or any holiday for that matter. Nobody I know really needs any more frivolous “things,” and the last thing I want is a big stuffed bear holding a heart that says “I love you.”  I like to give gifts that are thoughtful, homemade, useful, highly enjoyable, or all of the above.

Therefore, I am dubbing these truffles, “A Gentleman’s Valentine.” And although these Coconut Rum and Whiskey Chocolate Truffles are equally enjoyed by the ladies, they are the perfect “make it yourself” gift for the guys! Did I mention, they require only three ingredients? Please, you had me at truffles.

Ingredients

 

Ingredients:

  • 12 oz semisweet chocolate chips (I prefer Ghirardelli 60% dark chocolate)
  • 1 cup heavy whipping cream
  • For Coconut Rum: 1/4 cup coconut rum and 1/4 cup finely chopped coconut
  • For Whiskey Chocolate: 1/3 cup whiskey

*Kid-friendly (non-alcoholic): substitute pineapple or coconut juice for liquor

 

Directions:

* These are quite easy to make, but they do need about 2 1/2 hours in the refrigerator to fully firm into ganache for truffles.

Chocolate Chips

  • Place the 12 oz chocolate chips in a medium glass or metal pan.

Cream

  • In a small pan over low heat, bring 1 cup heavy whipping cream just to a simmer.

Mix in Cream

  • Pour the heated cream over the chocolate in the glass pan.
  • Stir until smooth.

Adding Liquor

  • Add either the coconut rum and coconut flakes, or the whiskey.
  • Stir until well mixed.

Refrigerated

  •  Cover and chill until just firm, about 2 hours.

Making the balls

  • Using a small ice-cream/olive scoop, or small spoon, scoop up the ganache and roll into balls.
  • Place on a baking sheet lined with parchment paper and chill until firm, about 30 minutes.

  • Garnish the coconut rum truffles with remaining coconut flakes. Garnish the whiskey chocolate truffles with cashews.
  • Makes about 2 dozen truffles.
